Ingredients

  • 1 lb ground beef
  • 2 cups cooked quinoa (cooled)
  • 3 tbsp soy sauce
  • 2 tbsp Oyster sauce
  • 1 tbsp sesame oil
  • 1 tbsp avocado or cooking oil of your choice
  • 1 tbsp brown sugar
  • 1 tbsp mirin
  • 10 cloves garlic, minced
  • 1 medium onion
  • 1 cup frozen peas and carrots
  • 2 eggs (optional)

Prep

  • Chop 1 medium onion
  • Mince 10 cloves of garlic
  • Save a small portion of each to sauté while making the fried quinoa

Instructions

  1. Flavor it up: In bowl add ground beef, onion, garlic, soy sauce, mirin, oyster sauce, sesame oil, and brown sugar. Let marinate while cooking quinoa.
  2. Quinoa: cook quinoa as specified on the package instructions. I like to add seasonings to my boiling water: salt, garlic powder, Ms. Dash (garlic & herb). Once cooked thoroughly, put to the side until it has cooled.
  3. Cook the beef: In a large pan over medium heat, cook the ground beef until browned and all juices have dried up.
  4. Add veggies: In a separate skillet, add a thin layer of avocado oil or cooking oil. Once the oil is hot, begin the process of sautéing your leftover chopped garlic and onions. Once your garlic has turned slightly brown and onions have become translucent, toss in the peas and carrots. Stir-fry for another 2 minutes until slightly softened.
  5. Optional egg: Push everything to one side of the pan, crack eggs in, and scramble until fully cooked. Mix it into the veggies.
  6. Fry the quinoa: Add the cooked, cooled quinoa to the pan. Stir everything together, letting the quinoa soak up the flavors.
  7. Marrying flavors: Combine the ground beef bulgogi into the same skillet as the fried quinoa. Add same seasoning sauces used to marinate the ground beef bulgogi to the same skillet. Give it a good mix so the flavors can come together with the fried quinoa
  8. Garnish & serve: Top with green onions and sesame seeds. Serve hot and enjoy!
